I gave a lot of thought as to what should be the very first recipe I feature on my blog. A recipe of my own? One that is tried and true? Something fancy? Simple? I could never quite decide and while making dinner tonight I decided to take some pics and if they turned out okay, this would be the one! It is pretty much none of the above, but I have made it a handful of times, I love it, and it is quite healthy--very fitting for this first week of the new year.
Here are all of the ingredients you'll need for this recipe:

The slaw...
The slaw with Feta. I like to add mine directly into the slaw instead of sprinkling on to the finished product. I feel the Feta is more equally distributed this way...
Please note the stray black beans in the frying pan. This will happen to you!

Black Bean Tacos
Recipe from Bon Appetit, February 2009
Makes 4 tacos/2 servings
1 15oz can black beans, drained
1/2 tsp ground cumin
5 tsp(or more--I never have been able to fry all 4 tacos in the mere 3 tsp this recipe calls for) olive oil, divided
1 TBSP fresh lime juice
2 cups coleslaw mix
2-3 green onions, chopped
1/3 cup fresh cilantro
4 white or yellow corn tortillas
1/3 cup crumpled feta cheese
Bottled hot sauce(I use tabasco)
Place beans and cumin in a small bowl; partially mash. Mix 2 teaspoons of the olive oil and lime juice in a medium bow; add coleslaw, green onions, and cilantro and toss to coat. NOTE: this is also when I add in the feta cheese. Season the slaw to taste with salt and pepper. DO NOT forget the salt and pepper.
Heat 3 tsps(or more as I mentioned above) olive oil in a nonstick skillet over med-high heat. Add tortillas, one at a time. Spoon 1/4 cup bean mixture into half of the tortilla; cook 1 minute. Fold tacos in half. Cook until golden brown, about 1 minute per side. Fill tacos with the slaw and feta. Drizzle hot sauce on top, if desired. I desire. Repeat for each tortilla.
